These are similar to bakewell tarts, but with a slightly lighter topping and made with strawberry jam rather than cherry. I’m not sure why this was, or whether these tarts have any other history or link to the similar baked goods from Bakewell but they do taste good! Grandma used to make her own shortcrust pasty for these but hasn’t included the recipe. Any shortcrust pasty would work fine I’m sure.
Ingredients:
Shortcrust Pastry
Strawberry Jam
4oz (115g) Ground Almonds
4oz (115g) Caster Sugar
Few Drops Almond Essence
1/2 tsp Vanilla Essence
2oz (55g) Butter or Margarine
2 Eggs
Method:
- Preheat oven to Gas Mark 8 / 450F / 230C
- Grease and line a 12-hole baking tray with pastry circles
- Place 1/2 tsp jam in each tart
- Mix ground almonds and sugar together
- Add a few drops of almond essence and 1/2 tsp vanilla essence
- Melt butter and stir in
- Beat egg and beat into mixture
- Divide mixture between tarts and bake for 20mins
