The Best Burgers

In the summer, I love making burgers for the BBQ and play around with recipes quite a lot. Being winter here in the UK there aren’t many BBQs happening at the moment but we had a pack of mince in the fridge a few days ago so I decided to make these for a change.  This is my go-to burger recipe, though I do experiment with other spices sometimes.  I was introduced to Montreal Steak Seasoning by the Canadian landlord in our local pub.  He was cooking BBQ at the time and was softening onions in it to serve alongside his burgers.  I took it one step further and put the seasoning and onions into the burgers and haven’t looked back since.  In the UK, Schwartz do a version that is available in Costco – it’s well worth tracking down.

I like to serve these with sweet potato wedges and a nice crispy salad.

Ingredients:

500g Beef mince (look for around 20% fat, the super-lean stuff tends to end up dry)
1 Medium onion
1 Slice bread, blended into breadcrumbs
1 Egg
1 Heaped teaspoon Montreal steak seasoning (I sometimes feel tempted to add more, but it is quite strong and salty)

Method:

  1. Chop onion finely and microwave on full power for 1min to soften slightly
  2. Mix mince, breadcrumbs, seasoning and onion thoroughly, then stir in egg to bind
  3. Using your hands, divide mixture and shape into 6 burgers
  4. Grill/fry on a medium heat for 10-12 minutes until nicely browned and cooked through. If the weather isn’t up to BBQ, they cook well in a nice big ceramic frying pan on the hob.
