Overripe banana bars

I love it when bananas are a bit overripe in the supermarket and reduced to 10p/kg! This little lot cost me 17p this morning and there’s absolutely nothing wrong with them. Usually I make them into banana bread but as I’ve been rushing out of the house with little time for breakfast this week I decided to have a go at making some cereal bars instead. These only took 5 mins to throw together but came out really well – slightly sticky/chewy from all the banana which gives the illusion of being worse for you than they actually are!

Ingredients:

  • 4 overripe bananas (the riper the better!) mashed with a potato masher until they’re runny with few lumps
  • 250g porridge oats
  • Teaspoon vanilla essence
  • 100g raisins  (any similar sized dried fruit would be fine)

Method:

  1. Preheat over to gas mark 5 / 375F / 190c
  2. Grease a 20x30cm (approx.) non-stick baking tray (I used spray oil)
  3. Mix all ingredients in a bowl
  4. Pour into tray and press down well with the back of a spoon until level
  5. Bake for 20mins until edges just begin to brown and surface feels springy to touch
  6. Cut into 12 bars while still warm and move to wire rack to cool
