Banana, apple and sweetened condensed milk cake

This recipe came about because we had an almost-full can of sweetened condensed milk in the fridge and some fruit that was looking past its best and needed using up.  I’m a big fan of banana bread and hate food to spoil and go to waste so thought I’d combine these ingredients and see what happened. This turned out really well. It would also be lovely with a handful or two of sultanas / mixed fruit stirred in with the apple.

Ingredients:

300g self raising flour
Approx. 350g sweetened condensed milk (from a 397g can)
3 bananas (the riper, the better)
50g butter, softened
25g coconut oil (you could use butter instead if you’ve not got any – isn’t worth buying it just for this!)
2 small apples, peeled and chopped into tiny dice
1tsp vanilla essence
1 egg

Method:

  1. Preheat oven to 170c / gas mark 5
  2. Grease a square 20cm cake tray (I use spray oil)
  3. Peel bananas and add to mixing bowl with butter, coconut oil, and vanilla.
  4. Mash / beat until smooth
  5. Add vanilla essence and egg
  6. Beat until combined
  7. Add flour and mix to combine
  8. Stir in apple
  9. Transfer mixture to tin and bake for approx. 30mins until golden and springy to the touch
  10. Allow to cool slightly in tin before transferring to wire rack to cool
