Proper carbonara doesn’t contain cream. I experimented with a few different recipes before settling on this as a final version. This is comfort food at its best and only takes around 20 minutes to make.
Ingredients
25-30g finely grated cheese per person, ideally a 50/50 mix of parmesan and pecorino
1 egg per person
Black pepper
100-125g spaghetti (dry) per person
50g pancetta (or smoked bacon bits) per person
2 cloves garlic, peeled but not chopped
1 tablespoon olive oil
Method

- Fry pancetta and garlic in olive oil until crispy
- While that cooks, boil the spaghetti in a large pan of salted water
- Beat the eggs, cheese and black pepper in a bowl
- When the spaghetti is cooked, discard the garlic and put 1 ladle of the spaghetti water into the bacon pan and turn off the heat
- Quickly drain the spaghetti and add immediately to the bacon pan. Add the egg/cheese mix and stir it all together quickly.
- Serve
