Tried several in the past, but this BBC Good Food recipe is the nut roast we’ve made for the last couple of years that is even more popular than pigs in blankets in our house. So much so that I’m making a second one this year so we can continue eating it for the next couple of days. It isn’t dry or dusty like some nut roasts and is so delicious that the meat-eaters end up fighting over the leftovers as it makes a fantastic boxing-day breakfast or addition to a turkey sandwich too.
The only tweaks I make are using the entire 250g pack of chestnut mushrooms and not bothering with the sauce in favour of vegetable gravy/cranberry sauce.
