Drunken cheeseboard scones

Situation: Had a couple of beers on the boat the evening before, accidentally fell asleep leaving most of a can of beer (a delicious milkshake IPA, as it happens). Woke up to the realisation that we had forgotten to bring the bread for the bacon sandwiches, but really fancied a cheese scone. We had the dregs (probably 30% rind) of a piece of stilton in the fridge, and some parsley on the side that had seen better days.

Welcome drunken cheeseboard scones! I reckon this would work with pretty much any beer / cheese, so saving the recipe here for next time there is leftover beer.

I would have used cayenne pepper and mustard powder instead of the chilli powder and black pepper but had neither on the boat.

Ingredients:

225g Self Raising Flour

1/4 tsp Chilli Powder

1/2 tsp Black Pepper

Pinch Salt

100g Stilton (inc rind is fine), chopped / grated as finely as you can

Handful Parsley, chopped

1/4 Medium Onion, softened in tsp olive oil and a pinch of salt until translucent

50g Butter

1 Egg

Approx 50ml leftover beer, to bind (you could use milk instead)

Method:

1) Preheat oven to gas Mark 6 / 200c / 400f

2) Mix flour, chilli, pepper and salt in a bowl

2) Rub in butter

3) Mix in cheese

4) Mix in softened onion and egg

5) Add enough beer to bind to a ball of dough, then roll out fairly thick and cut scones

6) Bake on a non stick / lightly greased tray for 15mins
