Stolen banana bread

Emily made this delicious banana bread the day before setting off on her big Italian adventure.  Apparently the recipe was stolen from one of her friends.  It was so good that I didn’t have chance to take a photo before it was eaten.

Ingredients
125g butter
150g of sugar
2 very ripe bananas, mashed
1 egg
1tsp vanilla extract
190g self-raising flour
25g crushed walnuts
1tsp ground nutmeg

Method
Cook on gas mark 4 for 1 hour

  1. Preheat oven to gas mark 4 / 350F / 180C
  2. Melt butter and sugar in a pan
  3. Take off heat and add mashed banana
  4. Leave to cool and add egg
  5. Add vanilla extract, nutmeg and self raising flour (sieved)
  6. Add walnuts
  7. Pour in to lined loaf tin and bake for 1 hour

    I’m glad you enjoyed it. Though I can’t take all the credit, as mine is a revised version of a recipe that I found online that is just banana and vanilla. Personally I do more nuts and dark chocolate. It’s a beast of a bread that I make all the time with different tweeks. So have fun and enjoy
